BUT,  Don't you step on my Blue Suede Shoes on your way to the Dogwood Chapter BIG DOG!  Yep, the Big Dog, July 1st, 2nd, and 3rd at Beautiful Tyler State Park, Area 4, Trailer Camping Area.  Hey, Big Daddy and all you Cool Chicks too, Load up the '57 Chevy station wagon and "Come on Down"!  We have people coming from Kansas, Mississippi, Louisana and from all across the Great Lone Star State.  Come on out and meet members from other Chapters and enjoy the Fantastic FUN, FOOD and FELLOWSHIP of the Lone Star Dutch Oven Society!  There are 30 trailer hook up spaces, each with water and electricity.  So bring your fans, bring your cool clothes, bring your DOs and let's start "COOKIN" ! 

The main meal will be Saturday noon with pots on the tables at 12:30.  Of course we'll be cooking and eating on Friday, the rest of the day Saturday and Sunday.  BUT.... We want everyone to have plenty of time to visit, talk and get to know the other members.  The LSDOS is a GREAT BUNCH of PEOPLE !  The Canton 1st Monday Trade Days will be just up the road that weekend for all you "antique'er" and "shoppers". But don't spend to much time there because we want to "Meet and Greet" you, visit with you and just say "HOWDY" !  If you have games or other forms of entertainment feel free to bring them for everyone to enjoy.  If you can play a musical instrument, pack it up and bring it on.  We'll have our on LSDOS "Hoe Down"!  That would be Great !  So, Get what you need, Bring what you got, Borrow what you ain't got, and we'll see "YOU" at the Dogwood Chapter "Big Dog",  July 1st, 2nd and 3rd. for.....

Round Up those Little DO's and move'em out to Tyler State Park !  It's that time again..!  We  gotta gather up all you Dogwood Chapter Members for another GREAT DUTCH OVEN  ROUND UP of DO Cooking!!  Everyone will be corraled again at Area 4, Tyler State Park, Saturday Morning, June 4th.  Come early and get a good spot!  We will plan on the food being on the table at 12:30 and we will eat after offering Prayer for our many Blessings.  We will have a business meeting after we eat (and before we take a nap!) to discuss our BIG DOG for the 4th of July week end.  We already have people coming from Kansas, Mississippi and Louisiana, plus many from our TEXAS CHAPTERS !   It's gonna be GREAT!

Is this a GREAT STATE or What?  TEXAS has a little bit of everything and a WHOLE LOT of the BIGGEST & BEST !  AND....the Biggest & Best thing coming up in this part of the LONE STAR STATE is....... YEP, You guessed it.......
THE DOGWOOD CHAPTER DOG May 7th at Tyler State Park, Area 4, from 9:00 until...  This will be a gathering of the BEST People, the BEST Cooks, and we will have the Best FUN!, Best FOOD!, and the Best FELLOWSHIP in this neck of the woods.  "WHY...?" You ask.  Because....., We're the, DOGWOOD CHAPTER OF THE LSDOS...! 

So, Mark your calendar, plan your menu, polish your pots and get ready to COOK and have FUN!  We'll have another GREAT TIME....!  Several have already reserved their camping sites, so if you plan on staying an extra day or two, get in touch with TYLER STATE PARK and claim your spot!

HELLO... DOGWOOD CHAPTER!
WHAT CAN I SAY.....


AGAIN it was a GREAT TURNOUT with GREAT PEOPLE and GREAT FOOD!
The weather was perfect!  And the cooks out did themselves, again.  What a wide varity of dishes placed on the tables!  If ANYONE left hungry it was strictly their on fault.....or perhaps they might have left their dentures at home.  FUN, FOOD, and FELLOWSHIP!  The greatest thing was watching every one visiting and talking with other members.  A little over two months ago most of us had never met.  And then a wonderful bunch of people showed up at our first DOG, and our second, and our third, and our last DOG.  People came from all parts of northeast Texas with the common bond of DUTCH OVEN COOKING running through their veins and now we are the DOGWOOD CHAPTER and one BIG HAPPY FAMILY!  That's what it's all about; GOOD FUN. GOOD FOOD and WONDERFUL FELLOWSHIP with like minded people.  We're off to a spectacular start.  Let's all work hard to keep it going!  If you have any questions, concerns, or problems, Please let us know.  It's YOUR Chapter and You're A GREAT BUNCH of PEOPLE!
    It was a busy place around campsites Saturday morning with people preparing to perform their magic in the cast iron pots. The smell of coffee was in the cool morning air along with the wonderful aroma of 48 pots a cookin'.  Yep! Fourty Eight POTS!  That's two more than last time!  You could get full just sniffin'!

After the meal we took care of a little business, naming our Chapter the "DOGWOOD CHAPTER."  Gary Richey was elected Sect/Treas and Jerry Hannah was elected Chapter Advisor for the coming year.  Then we had FUN giving away stuff, like a Lodge 10" Camp DO, a Lid Lifter, donated by Bruce & Kathy Bonnett of Dallas, and 20, Lodge Camp Cooking 101 Cook Books.  The DO and Cook Books were donated by Mr. Walter Middleton, owner of the Tyler & Longview Army-Navy Stores, where members of the LSDOS can get a 10% discount on Lodge Cast Iron Cookware.  A Great Big "THANKS" to Mr. Middleton!!  THANK YOU Bruce & Kathy!
    We have "Scouts" out looking for good places to hold our next DOGs.  Remember we will need a lot of room for all our members to cook.  Any one with a good suggestion, Please let us know, so we can check it out. 
    Jim Lewis and Earl Timmons will be holding a DO Cooking demo at Alanta State Park this coming week-end, April 9th.  Thanks Jim and Earl for your extraordinary efforts in promoting DO Cooking, The LSDOS and The Doogwood Chapter!  Carolyn Chandler of Center, Texas is in the process of starting a new Chapter of the LSDOS in the Center area.  They will be having their 1st organizational DOG on Saturday April 23.  So you see, we are not alone.  DO cooking is spreading like wildfire across the Great Lone Star State.  Since the first of the year there has been 4-5 new Chapters started.  Northeast Texas "Dogwood Chapter", Bastrop, TX., LaPorte, TX., and Center, TX. that I know of.  It would be good if some of us could go down to Center and help them get started in the same great way as the Dogwood Chapter.  It's really not that far.  They would appreciate the attendance and cooking with open arms.  That's the amazing and wonderful thing about DO cookers.  They never meet a stranger and you're ALWAYS WELCOME to their DOGs.  The ole Black Pot really does bring out the best people and the best in people!
    Peggy & I went out to Tyler State Park today a checked Area 4.  There was only one camper there.  Stopped by the Park office and they wanted us back out there for our May 7th Dog.  They said the only reason there were that many campers in Area 4 last time was because of the Azeala Trail.  So...since it is such a nice place to hold our Dog, we will meet there again on May 7th!
    I'm sure I've left something out, but this is getting pretty long sooo, I'ma gonna chop it off rite yer.

Hi Everyone, 
    Just a note to say, "THANK YOU" to each of you that were at our 1st organizational Dutch Oven Gathering ( DOG ).  It was a beautiful day, delicious food, and a GREAT BUNCH OF PEOPLE !   Thank you for coming out and sharing everything with us.  Hope you had as much fun meeting us and exploring the "ins and outs" of DO cooking as we did meeting each of you and cooking for you.  We had a really great time! 
    As Gale Merriwether, Pres. LSDOS,  explained, we must have three "organizational DOGs" in order to become a sanctioned Chapter of the LONE STAR DUTCH OVEN SOCIETY.  SOoo...We have one down and two to go!  Our next organizational DOG will be on the 19th of Febuary.  Our third on 5 March and at the first regular meeting after we are sanctioned, which will be on 2 April, '05, we will elect officers for the new chapter.  Mark these dates on your calendar and make plans to BE THERE!
    Ok, We Need a NAME for our chapter.  Put your thinking caps on and come up with some really good names on which we can vote.  Since our area covers East Texas from the DFW area to the Lufkin area, we need a name which would include this large area.  "Tyler Rose" or "Rose Capital" might seem to be too restrictive.  We already have suggestions of "Rosebud" and "Pioneer Pot Lickers".  So see how creative you can get for our name!  Oh, by the way, there is already a "Piney Woods" Chapter at Lufkin.
    HOPE TO SEE YOU ALL ON THE 19th AND COME "READY TO COOK" !  No, you don't have to cook until you feel comfortable in doing so.  BUT....COME ENJOY THE FUN, FOOD AND FELLOWSHIP!   Until then, "HAPPY TRAILS TO YOU".

The people came....!  The rain didn't....!  And we had a GREAT DOG!  Did I say GREAT..??
WELL, IT WAS!  We had another large crowd.  Better than the first DOG, I believe.  We had 17 pots with 8 new cooks.  A GREAT BIG "THANK YOU" to everyone.  The rain stayed away and the food was on the table about 12:30.  After offering THANKS for the food and our many blessings, we lined up, grabed a plate, dug in, and cleaned out the pots!  Pots on the table were:

    The food was delicious as usual.  NO COMPLAINTS WERE HEARD...!  We had a lot of visitors who asked a lot of questions about DO care and cooking.  Hope everyone had their question answered and are READY TO COOK!  Several to join as new members to our Chapter.  Thanks!  We now have 21 members in our Chapter representing 11 families.  WE NEED MORE !  Come on out and let's have to best Chapter in the STATE OF TEXAS !  We want everybody that likes to cook or is interested in learning to cook in the DO to come out and start cooking.  There will always be plenty of people to help you get started and help you in any way we can. 
    We sold all our Cook Books, but we will have more next time.  The profits from the cookbooks goes to the chapter to help buy supplies such as plates, plasticware, etc.
    I want to thank Bruce & Kathey Bonnett of the Praire Dog Chapter, for driving all the way from Dallas to help us cook.  THANK YOU!

TWO DOWN and ONE TO GO...!!
Hi Fellow DO Cookers,
    First, I want to thank everyone that has been involved in getting our new Chapter up and running.  Our first two DOGs have been absolutely fantastic.  Wonderful food shared with wonderful people.  How much better does it get...!  The LSDOS motto of FUN, FOOD and FELLOWSHIP has truly been experienced with the people we have been privileged to be associated with during our first two DOGS.  AND THE BEST IS YET TO COME...!  After the next organizational DOG we will be a fully sanctioned Chapter of the Lone Star Dutch Oven Society.  Our regular monthly meetings will be held on the first Saturday of every month.  Our first regular monthly meeting will be on April 2, 2005, at which time we will elect officers for our new Chapter.  If you are interested in being a member of LSDOS and this local Chapter, PLEASE  join the LSDOS as soon as possible so you will be elgible to vote.  The input of each member will always be carefully considered and appreciated.  The local chapter organization will consist of a Chapter Advisor and/or Co-Advisors, Secretary, and Treasurer. Also, we will have a box at our next meeting to put in our Chapter name suggestions.  So, put on your thinking caps and come up with a good name for our Chapter.
    Our next DOG will be at the same place.  Tyler State Park, Area 4.  Times will be from 10:00 a.m. until we get through eating, talking and visiting....  Pots will be on the table around 12:30.  If you have friends or neighbors that are truly interested in preserving the art of DO cooking, invite them out.  We need members that enjoy the FUN, FOOD and FELLOWSHIP of like minded people.  Looking forward to seeing everyone on the 5th of March for another fantastic GOOD TIME DOG...!       Until then....HAPPY TRAILS TO YOU !

HELP...!  I NEED MORE ADJECTIVES......!!

We had an Excellent, Wonderful, Marvelous, Extraordinary Fine time at our last DOG !   How can you explain such a GRAND gathering with mere words....  Once again we had a tremendous turnout with Great Cooks and Great People !  We had four (4), yep that's right, four tables full of food.  Three tables (32 Pots) of delicious DO food for the main course and one table full (16) of "to die for" desserts for a total of 46.  (Don't blame Al Wilkie for the misinformation that he put out on the internet.  It was my fault...!  I started "braggin" before I had my facts straight.  Sorry 'bout dat !  How does crow taste cooked in a DO..?  Yummm...?) After giving Thanks for our food by Dan Bailey, we all "dug in" to see what damage we could do..!  As to date , there has been no reports of anyone OD'ing on DO cooking.  Although, there were a few droopy eyelids when some of us got too comfortable in our chairs after dinner....  Peggy's last count was 91 people that lined up to eat with a few more coming in later. Another Great Big "THANK YOU" to everyone who cooked these wonderful dishes.  It was all SOOOoooo GOOD !

Jim Lewis demostrated how to "season" a Dutch Oven with charcoal as he prepared Stacie Smith's 10" DO for our next DOG.  He started by thoroughly washing the DO and then coating it with Crisco Shortening.  He then placed the DO, with the lid on, on a full spread of fresh coals and surrounded the pot with his circular wind screens and placed an ash can lid on top to hold the heat in.  No coals were placed on the lid of the DO.  He then "cooked" the pot until the charcoal was completely burned up.  The DO came out with a beautiful patina seasoned finish....Ready to COOK!  Hear that Stacie? It IS ready to Cook!  Enjoy...! As a lot of people were cooking at this time, many did not get to observe the procedure.  Jim has graciously agreed to go through this process again at our next Dog on the 2nd of April. Hey Group,

Ouida and I got up before daylight and loaded the van with our Dutch Oven gear and food to drive over to the Tyler State Park so we could participate in the 3rd organizing DOG. It is a little over 50 miles drive for us to get there.

When we arrived at the camp grounds, a few people had already set up their cooking stations and had coals underway. We started a camp fire so we could get

warm and then off loaded our cooking gear and the all this was before 9:00. As we were getting set up, we noticed that several more families arrived and began to their cooking area set up.

This a neat camp ground as it is built like a cul-de-sac or key ring. 39 camping spots ring an open but tree covered area that has a big covered area with tables under it. Each camp site has water and electric service connections. When everybody got set up, an airmail view must have looked like a big wagon wheel.

We got our Gumbo underway and then walked around to visit with the other cookers. We were amazed that every site was covered with black pots. While we were getting our contribution ready to cook, the whole place filled up with people.

At lunch, there were 46 pots of main course food located on several tables plus 14 desert pots.with about 100 people around to clean them up. The noise level lessened as everybody enjoyed the more then ample food.

We had a small meeting after lunch and it appears that we have enough to qualify for membership in the LSDOS. There will be another DOG on April 2nd where we will elect our leaders and such. We are looking forward to cooking with this group as the people are so nice and the age range is from early 20's to over 80 and everything in-between. The common thread among us is cooking with the black pots and having fun..

Our Chapter has started off with tremendous ENTHUSIASM !  We have a WONDERFUL group of PEOPLE and GREAT COOKS.  Twenty Three Members as of 3 - 14 - '05 and more joining everyday!  We want everyone that has attended any of our first three DOGs to be MEMBERS!  Let's keep the ball rolling.  The BEST IS YET TO COME !  We have received lots of exciting plans and ideas for future DOGs.  How about a LUAU DOG, or a MEXICAN DOG, or a CAJUN DOG ?   This is "YOUR CHAPTER", so let's have your ideas and suggestions.  All will be greatly appreciated.  We also will be planning joint DOGs with other Chapters so we can meet fellow Members of the LSDOS from other areas.   The possibilities are endless and EXCITING!   We have been contacted by the Mt Pleasant Chamber of Commerce for a DO cooking demo on May 14 for their "Moonlight Jubilee Festival" and Al & Ouida Wilkie are working with the Wills Point C of C for a DO demo at their "Frontier Day Festival & Rodeo".   Tyler State Park wants us to put on an "Interpertive Program" on DO cooking and a couple of Boy Scout groups have been in touch to do programs for them.   The "Outdoor Women's Group" from this area wants to work with us on an "Outdoor Recreation EXPO".   Also, I have been contacted by the Bass Pro Shop, Bossier, LA. about a DO cooking contest coming up April 10.  I will be receiving more info on this DO cooking contest in the next couple of days.  All you good DO cooks that want a chance to "show your stuff" get in touch with me and I will fill you in on the details.  So you see, we have lots of very worth while and exciting possibilities coming up for us to work with.  If anyone has questions about our Chapter, who we are, what we do, PLEASE get in touch with me.   We want everyone who is interested in preserving the wonderful art of DO cooking to be a member of our new Chapter.
    Door Prizes will be given away at our next meeting!  Mr. Walter Middleton, Owner of the Army Navy Stores in Tyler and Longview has donated a Lodge 10" Camp Oven to be given to a member of our new Chapter, plus 20 Lodge "CAMP DUTCH OVEN COOKING 101, from Backyard to Backwoods" cook books.   If you are a member, be sure to put your name in the pot for the drawings!   That's all for now....See You APRIL 2....And that AIN"T NO FOOLIN'  Until Then...
