We have lots of new members that are apprehensive about their skills and they need not be.

As for Cowboy, we had Gator Chili from him, and he is threatening rattlesnake meat now,
so lets try to keep a tight lease on him.

February 18th is the date for the Saltgrass DOG.  Looks like we
will still be having cool weather, so let's spice it up with Cajun
food.  Gumbo always goes good on cool days.  Gumbo tastes
good on any day.

The holidays are behind us and it is time to cook again.  Since
winter has seemed to pass us by, let's cook winter food before
summer gets here next month.  How about soup, stew, or
chili, anything with a little spice and heat?

The LSDOS Business Meeting will be at Birch Creek Park at
Lake Sommerville on January 14th.  This will be a Big DOG,
so let's all attend for Fun, Food, and Fellowship.  There will be
members from all over the state attending.  We would love to
have all of you attend too.

FAST START FOR '05!
The Saltgrass DOG comes early in January because of the LSDOS Board of Directors meeting on the 15th. 
January 8th, Pavilion No. 6, 1:00PM are the date, place and time at Bear Creek Park.  The theme is Cajun, who happen to be champions of cast iron cooking.  Quoting Joe Duke, "when a Cajun starts to cook hamburgers, he has to make a Roux first!" 
Remember the Big DOG and board meeting at Birch Creek Park on the north end of Lake Summerville.  Festivities will begin Friday the 14th, with the big meal and meeting Saturday mid-day.  Many will have breakfast together Sunday before returning home.
Looking forward to seeing everyone on January 8th.  Have a Happy New Year.  Hope that it is a good one for each and everyone of you.

SALTGRASS WAKE-UP CALL

The weather has not cooled off much, but the calendar has been flipped over to September, reminding us that cooking time is close.  The 17th is our date at Bear Creek Park, pavilion no. 6,  1 - 5 PM.  Cook your favorite recipe and do not forget your drinks.  We furnish the plates, spoons, fork, etc.
Now is the time to plan for the Big DOG at Glen Rose.  Details are in the last newsletter, which you should have received last week.  For those that have not attended one, this is a very good time to meet new people and observe different DO cooking equipment and styles.  Also, they are the friendliest people you will ever meet.

Finally, some cooler weather for October.  It sure makes Dutch oven cooking more fun.  While doing a demonstration back in August I could not tell the difference between the heat off the charcoal and the heat off the parking lot.

Turkey Time for the Saltgrass Chapter!!

November 19th is turkey day at Bear Creek Park in Houston:
                    Where:   Pavilion No. 6
                    Time:     1:00 to 5:00 PM

Mary & I will cook the turkey there.  If you would like to fix dishes to complement the great bird, we can have a real holiday feast, but as usual you can cook whatever you like, just make yourself at home and come.

This will be our last DOG of 2005, so let's have a BIG turnout.  Everyone is so busy the second half of December we fore-go that date for a DOG.

We will be letting you know as soon as we can what our January DOG date is.  Remember everyone is invited to the board meeting January 14th at Birch Creek Park, Lake Sommerville.  This is another Big DOG so come on up there.  It is a state park and we have an enclosed pavilion reserved.  It is called the group camping area.  It is a three day DOG for those interested.

We just got back from Bear Creek Park and have a list of dates for our DOGs for 2004.  Please mark your calendars and make plans to attend.  The dates are as follows:

Note that March and September DOGs are at Pavilion No. 1, the others will be at Pavilion No. 6.  Also the March DOG is the second Saturday of the month rather than the third.

We have commitments from cookers in Texas, Louisiana, Mississippi, Kansas, and New York already, so it looks like the National DOG is going to be BIG!!

Cooking time again! Winter is over and this should be a good outdoor day - cool enough to cook with a fire and warm enough to be comfortable.
No theme for this one. Just cook what you would like. We have a few members that are just getting into the swing of things, so we will keep it simple for them. However, we do enjoy seeing the gourmet style meals cooked by Duane, Sandy, and Joe. They give us an excellent example of what can be done with a Dutch oven.
I am not receiving your recipes. Please - Please - Please bring a copy to the DOG, or email them to me so that I can submit them for the newsletter.
Do not forget it is time to renew your membership for 2004.

SYRUP FESTIVAL 2003

The Village Creek Cookers of Lumberton held their annual syrup cooking festival on November 15th; and as usual it was a fabulous event.  The cane juice squeezing and cooking is really something to see.  It is all done in the 1920 - 1930's style with mules and antique tractors pulling the squeezers.  The cane juice is cooked down to syrup and anyone can purchase some of the finished product.  Also, they had an antique engine exhibit and a gristmill to grind corn.
The Village Creek Cookers cooked for about 300 people, with a little help from the Prairie Dog, Brazos Valley, and Saltgrass Chapters.

JANUARY 17th DOG

The January Saltgrass theme was Mexican and what great Mexican Food it was!  Eleven members and nine visitors attended, plus special guests Jerry and Irene Martin of the Wildflower Chapter.  The weather started out bad and then cleared off into a nice sunshiny day.
For the past year, Saltgrass has been giving away a 20-pound bag of charcoal to each membership that attends our DOGS.  This is an item that every cooker can use and use up quickly.

2003 Schedule:

January 11: Bear Creek Park Pavilion #6.  Start at 1pm and eat at 5pm.  Note that this is the second Saturday of the month rather than our regular third Saturday time.  We are meeting a week early so those interested in attending the January board meeting on the 18th can do so.  Come have a great time with us.

NOVEMBER 22nd, 2003 DOG

Sixteen members and fifteen visitors attended the November 22nd DOG of the Saltgrass Chapter.  Special guests were Cynthia, Drew and Jack Labossiere from Tiverton, Rhode Island.  The Labossiere family has recently moved from Houston to the frozen tundra of the far northeast, but they are retaining their membership in the Saltgrass Chapter.
The theme was Cajun food and we had lots of it.  Several types of gumbo were cooked and no two were alike.  Every one of them was delicious!
Saltgrass does not meet in December because their date is too close to Christmas.

The November DOG for the Saltgrass Chapter has been moved to the 22nd of November from 1:00 to 5:00 PM. Note that we will be in Pavilion No. 1, instead of Pavilion No. 6. Pavilion No. 1 is off the first road to the left when you turn in from Clay Road. Many from the Saltgrass Chapter wanted to attend the Syrup Festival at Lumberton hosted by the Village Creek Cookers Chapter of LSDOS on the 15th. Check the LSDOS website for information and direction to the Syrup Festival if you are interested in attending.
The theme for our November DOG will be a cold weather treat of SOUP, STEWS, or CHILI. How does that sound for cold weather fare? Great!
Also, Cynthia, Drew, and Jack LaBossiere are visiting Houston November 18th through December 3rd and can visit with us on the new date. Rick will not be able to make the trip, so he will have to stay up there in "Frozen Yankee Land."
FYI new members – Rick and Cynthia are previous Saltgrass Chapter Advisors.

OCTOBER 18th DOG NOTICE
BEAR CREEK PARK – PAVILION NO. 6

It’s that time again! Time for good food and fellowship. We are still on daylight savings time so our DOG will be from 2:00 to 6:00 PM on Saturday, October 18th.
I hope that all of you voted as we will have the results of the election, by this coming DOG. The last day to vote is October 15th.
At this time I do not have any further information about the Syrup Festival in Lumberton, but we do need to make a decision about the November DOG. Please come with some suggestions and ideas as we will be discussing it further.
Since we have several new cookers, who I hope will be able to attend this DOG lets just cook our favorites to share and help others. Look forward to seeing all of you on Saturday October 18th.

BSA  Celebrates  New  Office

The Boy Scouts of America celebrated the opening of their new office building on North Belt in Houston the week of May 4 thru 10.  Quite an impressive building!
Saltgrass members Leonard Gunderson, Leonard and Manuella Guerrero, Rick Serrata, and Gale Merriwether cooked chili, beans, rice, and cobbler for the scouts and visitors on May 7.  Boy Scouts and Girl Scouts are some of the best organizations for today's youths, and we are always ready to help them.

TP&W OUTREACH WILD GAME BBQ
BIG COOKING!

April 12th is the date for the TP&W Outreach Wild Game BBQ, and the Saltgrass and San Jacinto Chapters are cooking peach cobbler for approximately 800 kids.  We did this last year and it was lots of fun and fellowship.  We need all the cookers we can find, with chimneys, cooking tables, and 12” ovens.  The charcoal and ingredients will be furnished.  We will need to be at Herman Brown Park at 8 AM to get started.

Directions are:  From Houston, I-10 East to East Loop 610.
Take the Mercury Drive exit (first one outside the loop).
Turn left on Mercury Drive.
Go approximately 1 mile to Herman Brown Park.
(Watch out for lane change at the end of the boulevard, or you will wind up in a church parking lot like I did).
Only the cookers will be allowed to drive past the front of the park.
Follow the road to the right approximately Ό mile to the Pavilion.

The SaltGrass Chapter currently holds Salty Dogs every third Saturday of the month except June, July, August, and December.  DOGS Begin at 2PM and generally last until 6PM or until the last appetite is satisfied. (During the winter months, times will be from 1PM to 5PM).  The saltgrass chapter has new advisers.  Please welcome Gale and Mary Merriwether.  They are both accomplished cooks and wish to see our chapter grow and succeed. APRIL 12TH OUTREACH INTERCITY KIDS
TP&W OUTREACH WILD GAME BBQ – BIG COOKING!
BIG PARTY, LOTS OF COBBLER!

The Saltgrass Chapter co-ordinated a charity desert cook with representatives of three other chapters of LSDOS to help feed intercity kids of Houston on Saturday, April 12th. Sons of San Jacinto Chapter members, and cookers from the Prairie Dog and Brazos Valley Chapters contributed heavily to the combined effort.
Texas Parks and Wildlife Outreach Program furnished the BBQ, beans, and coleslaw at Herman Brown City Park in East Houston, with the Dutch oven cookers furnishing peach cobbler for approximately 850 kids and chaperones. This was the second spring we have done this, and it is a great way to spend chapter monies.
We started setting up awnings at 8:00 am and had 32 – 12" ovens of cobbler ready at 11:30 am, thanks to the cooperation of ALL involved. What a bunch of hard workers! The fellowship was great, also, with several new members involved. It was a "get together, get aquatinted, get it done" kind of day.




A fine group of folks who prepared and served 32 peach cobblers to about 850 kids.
